Garlic-Roasted Chicken and Potatoes

Simple and to the point, this dish is satisfying and filling.

  • 8 boneless skinless chicken breast halves
  • 10-12 small red potatoes, quartered
  • 1 tsp. dried rosemary leaves, crushed
  • 1/2 tsp. peppered seasoned salt
  • 4- garlic cloves, minced
  • 2 Tbs. olive oil
  • 1/4 C. shredded fresh Parmesan cheese
  • 1/4 C. chopped fresh chives

Heat oven to 425 degrees. Arrange chicken and potatoes in ungreased 15x10x1-inch baking pan. In a small bowl, combine rosemary, seasoned salt, garlic and oil: mix well. Brush over chicken and potatoes. Sprinkle with cheese. Bake at 425 degrees for about 40 minutes or until chicken is golden brown, its juices run clear, and potatoes are light golden brown. Sprinkle with chives.

  • Just made this dish.
    The chicken was tender and moist and I used small yellow potatoes...they were the bomb!
    I did double the mixture though, and cut the chicken in chunks.
    Kids and hubby loved it!

  • This is the rest of my comment. I am new here and all my comment did not get on. Buy dry buttermilk and keep it on hand and use it whenever you need it. Just mix up the amount you need.

  • I have not made this. I am going to make this today. I notice a common comment was dry chicken. I always use chicken breast and here is a very good hint. Soak your chicken breast in Buttermilk for no less then 20 minutes before cooking it. It makes it very moist and is never dried out. Even if you grill it. Just put enough buttermilk to cover the chicken in dish and put it in the frig. When ready to use just drain it. I do not buy aready made buttermilk as I hate it and I never know when I

  • Great & easy dish to make on work nights. However, nex time I will drizzle a bit of italian dressing on the potatoes before cooking. I also tripled spices & oil. Chicken was a bit dry at 40 min. May need to adj. cooking time to 30 min for boneless breasts. Family loved it though!
