Ingredients

  • 2 ½ lb. bone-in chicken thighs
  • 20 cloves of garlic (2 heads), unpeeled and whole
  • 5 small red potatoes, diced
  • 5 sprigs of thyme
  • ¾ C. chicken broth
  • ¼ C. dry red wine
  • 2 Tbs. of butter
  • 1 Tbs. olive oil
  • 2 tsp. salt
  • 2 tsp. Fresh pepper

Preheat the oven to 350 degrees. Heat a large skillet on medium-high with the olive oil. Season the thighs and potatoes with the salt and pepper (add more if needed). Cook the chicken, skin down first, browning each side. Once all of the chicken is browned place it in a large pan with the potatoes. Saute the garlic for about 2 minutes and pour in the wine. Pour this (juices and all) onto the chicken and potatoes. Slice the butter into thin slices and place it on the chicken. Toss in the thyme and pop it in the oven for 40 minutes or until the chicken is thoroughly cooked.
