  • 2 lb. whole mixed mushrooms
  • 1 1/2 T. olive oil
  • salt and pepper to taste
  • 3 cloves garlic, thinly sliced
  • 1/2 tsp. smoked paprika
  • 1 T. butter
  • 1/4 C. fresh parsley, chopped

Preheat your oven to 425°F. In a large bowl, add mushrooms, olive oil, salt, and pepper. Toss to combine. Spread mushrooms onto a large baking sheet and roast for 30 minutes, making sure to stir occasionally. In a medium skillet, melt butter. Add garlic and paprika. Sauté until soft and fragrant. Transfer mushrooms to a bowl and drizzle with garlic mixture. Sprinkle with parsley and toss to combine. Serve immediately.
