Garlic Roasted Tomato Soup

Roasting brings out great flavors in the garlic, onions, and tomatoes.

  • 12 Roma tomatoes
  • 1 yellow onion
  • 10 cloves of garlic
  • 1 pint heavy cream
  • 1 Tbs. tomato paste
  • 1 Tbs. sugar
  • 1 large sprig fresh thyme
  • 1 large bunch fresh basil

Cut Roma tomatoes in 1/2 and onions into 1" pieces and lightly coat with olive oil. Toast tomatoes and onions in oven at 350 F to golden brown in color, approximately 30 minutes. At the same time, roast garlic in 1/2 C. olive oil until tender. When finished, strain oil from garlic and puree tomatoes, onions, and garlic until smooth. Add to pot and bring to a simmer with tomato paste, sugar, basil and thyme. Simmer for 20 minutes. Finish with cream and salt and pepper to taste.
