  • 1/4 C. extra virgin olive oil
  • 1 boneless leg of lamb
  • 4 small yukon gold potatoes, quartered
  • 1 head garlic, peeled
  • 1/4 salt
  • 3 sprigs rosemary
  • 1 C. dry red wine

Warm a large skillet over medium-high heat. Coat lamb in olive oil and transfer to skillet. Cook until lamb is browned on all sides.

Arrange potatoes and half of garlic on the bottom of a 5-quart slow cooker. Add lamb to slow cooker. Season lamb with salt and rub with remaining garlic. Place rosemary around lamb and then pour wine into slow cooker.

Cover and cook over low heat for 8 hours or until cooked through. Serve warm.
