  • 2 C. white rice, cooked
  • 2 T. butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 C. broccoli florets
  • 1 C. cauliflower
  • ½ C. carrots, sliced
  • 1 C. baby Brussel sprouts
  • 1 can cream of mushroom soup
  • 1 C. cheddar cheese

In a large skillet, melt butter and sauté garlic until fragrant. Add in broccoli, cauliflower, carrots, and Brussel sprouts. Continue to sauté for 10 to 15 minutes. In a greased baking dish, add cooked rice. Transfer sautéed veggies to a large bowl and mix with cream of mushroom soup. Pour over rice, top with cheddar cheese, and bake for 40 minutes at 375 degrees.
