  • 1 lb. of boneless skinless chicken breasts
  • salt and pepper to taste
  • 1/4 cup olive oil
  • 5-6 Roma tomatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup basil seasoning
  • 1/4 cup unsalted butter

Cover the chicken with plastic wrap and pound each piece to an even thickness, about one inch or so in the thickest parts. Remove the plastic and sprinkle each piece of chicken with a bit of sea salt and freshly ground pepper.
Prep the tomatoes, garlic, and basil and put them aside.
Heat the olive oil in a large heavy skillet until a drop of water sizzles across the top. Then, add the chicken to the pan and fry it for several minutes on each side. The result should be the chicken being cooked thoroughly and the chicken being browned on both sides. When the chicken is done, set it aside.
Let the oil cool a few minutes, add the tomatoes, and return to the heat. Simmer to cook the tomatoes down into a chunky mixture. Add the garlic and butter and stir it to combine until the butter is melted. Add the chicken back in and soak it in the sauce for a few minutes.
