  • 2 pounds of large fingerling potatoes, hasselbacked
  • 1 stick butter
  • 2 minced garlic cloves
  • 1 teaspoon dried oregano
  • Salt and pepper
  • 1 cup Parmesan cheese

Preheat oven to 425F.
Place potatoes on aluminum foil-lined baking sheet. Meanwhile, In a bowl, mash and mix butter with garlic and oregano. For seasoning, generously add salt and pepper.
Using a vegetable peeler, shave Parmesan cheese and carefully put between about half the potato slices. Brush some garlic-herb butter on top of the potatoes as well.
Place in the oven for 10 minutes, then brush with more garlic-herb butter. Roast again until tender, for about 10 minutes more. Let them cook until browned or for 1 to 3 minutes.
Drizzle with remaining garlic-herb butter and season with salt and pepper.
