  • Salt and pepper to taste
  • 2 T. vegetable oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • ¼ C. red curry paste, extra for serving
  • 2 (13 oz.) cans unsweetened coconut milk
  • 2 T. lime juice
  • 3 T. brown sugar

Season beef with salt and pepper. In a skillet, heat oil and brown beef until cooked through. Add in garlic and onion; sauté briefly until fragrant. Transfer beef, onion, and garlic to your crockpot. In a bowl, whisk together curry paste, coconut milk, lime juice, and brown sugar. Pour mixture over beef and cook on high for 2 to 3 hours until sauce thickens. Serve with extra curry paste if preferred.
