Gazpacho Blanca
Ingredients
- 2 medium cucumbers, peeled
- 2 cloves garlic, minced
- 1 16 oz. container sour cream
- ½ C. plain yogurt
- ¼ - ½ C. chicken broth
- Salt and pepper to taste
- Hot sauce
- Garnish: Chopped tomatoes, green onions, fresh parsley sprigs and slivered almonds
Directions
Place cucumbers in a food processor and process until minced. Add garlic, sour cream, ½ C. yogurt and blend. If mixture is too thick add some chicken broth, if too thin add more yogurt. Add hot sauce, salt, and pepper to taste. Cover and refrigerate overnight. To serve, garnish with tomatoes, onions, parsley and almonds.
