Gazpacho Pasta Toss

Ingredients
- Pasta Toss:
- one 12-oz. package rigatoni pasta
- 1 medium cucumber, sliced
- 1 medium green pepper, chopped
- 2 Tbs. fresh parsley, chopped
- 1 basket cherry tomatoes, halved
- one 2.5-oz. black olives, sliced
- 1 C. summer squash
- Dressing:
- 3 Tbs. olive oil
- 2 Tbs. fresh basil
- 2 Tbs. lemon juice
- 1 Tbs. red wine vinegar
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
Directions
Cook pasta according to package directions. Cool. Add cucumber, green pepper, parsley, tomatoes, olives, and squash. Mix dressing ingredients and blend well. Toss with pasta mixture and chill overnight.
Serve with: Saucy Chicken Strips
