Gazpacho With a Twist
Ingredients
- 4 C. creamy tomato soup
- 2 C. peeled and chopped cucumber
- 3 Tbs. lime juice
- 1 green bell pepper, stems and seeds removed
- 1 C. oyster crackers
- 1 C. chunky salsa
- 2 Tbs. cilantro
Directions
Set aside a bit of cilantro and cucumber for a garnish. Combine all remaining ingredients in a blender and puree until smooth. Chill and serve cold.
