Georgia Caviar
Ingredients
- 1 (15 oz) can whole kernel corn, drained
- 2 (15 oz) cans black-eyed peas, drained
- 1 (10 oz) can diced tomatoes with green chilies (I use Ro-Tel hot)
- 2 C. chopped red bell pepper ( green works too)
- ½ C. chopped onion
- ½ - 1 C. chopped fresh jalapeno (this gives it a kick!)
- 1 (8oz) bottle Italian dressing (I use the Robusto Italian)
- 1 (4oz) jar chopped pimentos
Directions
In a large bowl, combine all of the ingredients and stir gently to combine. Refrigerate overnight. Serve with corn chips.
