Georgia Cucumber Jelly

Serve jelly as accompaniment to cold meat or fish.

  • 6 cucumbers, medium sized
  • 3 packages unflavored gelatin
  • 1/2 C. cold water
  • 2 C. boiling water
  • 1/4 C. cider vinegar
  • 1 tsp. grated onion
  • 1/4 tsp. salt
  • 2 drops of green food coloring
  • 1/4 C. pimentos

Peel cucumbers, remove seeds, and grate. Wrap in clean kitchen towel to absorb all the moisture for about 15 minutes. Sprinkle gelatin over cold water, add boiling water and stir until completely dissolved. Add vinegar, onion, salt and food coloring. Refrigerate until slightly thickened and stir in grated cucumbers and pimentos. Pour into 8 1/2 inch C. molds or 1 (4) C. ring mold. Chill 4 hours or until firm.
