German Apple Cake

Ingredients
- 2 C. flour
- 2 C. sugar
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1 C. vegetable oil
- 1 tsp. vanilla
- 4 C. apples, peeled, cored, and thinly sliced
- 1 C. nuts, chopped
- Frosting:
- one 8-oz. package cream cheese, at room temperature
- 1 tsp. vanilla
- 3 Tbs. margarine, softened
- 1 1/2 C. powdered sugar
Directions
Preheat oven to 350 degrees. Combine flour, sugar, cinnamon, baking soda, and salt. Stir in eggs, oil, and vanilla. Mix well with a spoon. Add apples and nuts. Batter will be thick. Bake in a greased and floured 9x13 inch baking pan for 45-60 minutes or until toothpick inserted into center comes out clean. Cool . Prepare frosting: Combine cream cheese and margarine. Add vanilla. Beat in powdered sugar. Spread on top of cake.
