German Oven Potatoes

A complete meal with boiled ham, cheese, and potatoes, flavored with chopped chives and sweet pepper.

Ingredients

  • 8 mid-sized potatoes
  • 7 oz. boiled ham
  • 1 red sweet pepper
  • 1 3/4 C. grated cheese
  • 3 eggs
  • 3/4 C. sour cream
  • 3/4 C. heavy cream
  • 1/4 C. grated Parmesan cheese
  • 3 Tbs. finely chopped chives or dill
  • 1 tsp. paprika
  • 1/2 tsp. salt dsh pepper

Directions

Peel the potatoes and cut in thin wedges. Dice ham and red pepper. Alternate potatoes, ham, pepper, and grated cheese in a buttered, oven-proof dish. Mix eggs, sour cream, whipping cream, Parmesan cheese, and chives. Flavor with powdered paprika, salt, and pepper. Pour the mixture on top of the potatoes and bake in the middle of the oven at 400 degrees F for 40 - 50 minutes or until set.

Makes 4 servings.

  • My Aunt Lou, used to wait until after the holiday ham was sliced and put up. The next day she'd make this recipe except used mozrella shredded cheese and mild cheddar. Try it, you will like it ,I'm sure.
