This recipe came from my mother and it's always a big hit during the summer.

  • 6 med. potatoes, peeled and boiled
  • 6 slices slow-fried bacon
  • 1 Tbs. flour
  • 2 Tbs. sugar
  • 3/4 C. chopped onion
  • 1 1/2 tsp. salt
  • 1/2 tsp. celery seed
  • 3/4 C. water
  • 1/3 C. vinegar
  • pepper to taste

Fry bacon slowly until crisp. Sautee onions in bacon fat. Add flour, sugar, salt, celery seed and pepper to onions. Simmer until bubbly.

 Take off heat and stir in water and vinegar. Bring to a boil while stirring constantely. Boil for 1 minute. Pour everything over already boiled and drained potatoes. Crumble fried over potatoes right before serving. Serve warm.

Note: Keep potato salad warm until ready to serve.
