  • 2 lb. desiree potatoes
  • 6 sliced green onions
  • 6 sliced hard-boiled eggs
  • 1/2 C. mayonnaise
  • 5 sliced gherkins
  • 50 g. shaved ham, finely chopped
  • 4 crushed garlic cloves
  • 2 Tbs. lemon juice
  • 1/4 C. chopped parsley leaves

Peel the potatoes and boil in salted water for 15 minutes
Slice them crossways after having drained them well and cooled for 5-10 minutes
Take a large bowl and place the egg, onion, gherkin, ham, and potato
Combine them well until mixed
Add lemon juice, garlic, mayonnaise, and parsley to the mixture and let it sit and marinate for 15 minutes
Season to taste with pepper and salt
Add ingredients to the potato slices, combine well, and serve fresh
