We love shnitzel, because it's so easy to prepare. This delicious German recipe will be a luscious addition to your recipe box, because it's so versatile.   • 6 lg. chicken breasts, excess fat trimmed
  • 2 tsp. salt
  • 2 tsp. pepper
  • 2 eggs, beaten
  • flour
  • 3 bacon strips, fried, chopped (bacon fat reserved)
  • 1 lemon, halved and juiced

Sprinkle chicken with salt and pepper. Dip chicken pieces in eff, then flour. Brown on both sides in the hot bacon grease. When browned, lower the heat to the lowest setting and cook for about 2 hours or until internal temperature reaches 165 degrees. When finished, garnish with the chopped bacon and lemon.
