  • 3 lb. beef roast, economy grade
  • 2 whole onions, peeled
  • 1/2 tsp. cardamom
  • 1/2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 tsp. nutmeg
  • 3 laurel or bay leaves
  • 1 clove fresh garlic or 1/2 tsp. garlic poweder
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper

Place the roast in a good-sized pot and cover it with water. Add onions, cardamom, cinnamon, allspice and nutmeg. Add bay leaves, garlic, salt and pepper. Boil for 3 hours over medium heat, replacing the water that boils off. Then remove the meat and drain. Slice it as thinly as possible and serve. The meat will have a delicate pink color on the inside and be brown on the outside.

Tip: You can also do it in the crockpot to avoid a rare inside.
