Ginger Peach Mold
Ingredients
- 1 6 oz. box orange Jell-O
- 2 C. hot water
- 14 oz. (a little less than 2 C.) ginger ale
- 1-1 1/2 C. thinly sliced peaches (I use canned, cut into pieces)
- 1 C. cool whip
- 1 tsp. ginger
Directions
Dissolve gelatin in hot water. Add ginger ale--I pour the ginger ale into an 8x8 pan for a while to let it get a little flat; otherwise the Jello-O will foam up when you add it. Chill until slightly thickened. Add peaches and put in 1 1/2 qt. mold. Chill until firm. Un-mold and serve with whipped cream flavored with the ginger.
Yield: 8-10 servings.
