Ginger Snaps

These tasty cookies are especially good crumbled over vanilla ice cream.

Ingredients

  • 2-1/2 C. flour
  • 1-1/2 tsp. ground ginger
  • 1 tsp. baking soda
  • 1 tsp. ground allspice
  • 1/2 tsp. salt
  • 1-1/2 C. sugar
  • 2 Tbs. butter or margarine, softened
  • 1/2 C. applesauce
  • 1/2 C. molasses

Directions

Heat oven to 375 F. Spray cookie sheets with nonstick spray. In medium bowl, sift together flour, ginger, baking soda, allspice, and salt. In large bowl, beat sugar and butter at medium speed until blended. Whisk in applesauce and molasses. Add flour mixture to applesauce mixture; stir until well blended. Drop rounded Tbs. of dough 1-inch apart onto prepared cookie sheets. Flatten each slightly with moistened fingertips. Bake 12-15 minutes, or until firm. Cool completely on wire rack.
