Ginger-Soy Chicken

This stir-fry dish is flavorful and so easy to make!

  • 3 Tbs. vegetable oil
  • 1 1/4 lb. chicken breast cutlets, cut into strips
  • salt and pepper
  • 2-inch piece of fresh ginger, peeled and minced
  • 4 garlic cloves, chopped
  • 1/2 tsp. crushed red pepper flakes
  • 6 scallions, cut into 2-inch lengths, then cut lengthwise into matchsticks
  • 1/4 C. tamari (dark soy sauce)
  • 3 Tbs. honey
  • 1 head iceberg lettuce, shredded

Heat large skillet over high heat.  Add vegetable oil.  Add chicken, season with salt and pepper, and stir fry to sear the edges of the meat.  Add ginger, garlic, and red pepper flakes and cook for 2 more minutes.  Add scallions, cook another minute, then add tamari and honey.  Glaze the chicken in the sauce.  Remove pan from heat, cover a platter with shredded lettuce, place chicken on top, and serve.
