Good Summer time (or anytime) light flavorful dressing

  • 1 C. papaya nectar or apricot nectar
  • 1/3 C. rice wine vinegar or white wine vinegar
  • 4 tsp. grated fresh ginger root
  • 1/2 tsp. sesame oil
  • 1/4-1/2 tsp. ground red pepper
  • 1/3 C. extra virgin olive oil or salad oil

In blender container or food processor, combine the first 5 ingredients, blend until smooth. With blender or food processor running, slowly add the salad or extra virgin olive oil through the hole in top blending until smooth.
