  • 1 ¾ cups of all-purpose flour
  • 1 teaspoon of baking powder
  • ¼ teaspoon of salt
  • ½ teaspoon of baking soda
  • ¼ cup of molasses
  • 1 cup of whole milk
  • ½ teaspoon of ground ginger
  • 1 teaspoon of cinnamon
  • 2 eggs
  • ¼ cup of sour cream
  • 2 teaspoon of unsalted butter, melted
  • ¼ teaspoon of lemon zest
  • White chocolate chips, for decoration
  • Red chocolate chips, for decoration

In a large mixing bowl, combine the dry ingredients (flour, baking powder, salt, baking soda, ginger and cinnamon).
In a separate bowl, combine the wet ingredients (milk, molasses, eggs, sour cream, lemon zest, and melted butter).
Incorporate the wet ingredients with the dry ingredients and blend them together nicely. Set the batter aside for a few minutes and prepare to preheat the griddle. Brush some melted butter or spray a nonstick onto the griddle and place a gingerbread man cookie cutter.
Scoop out 1/3 cup of the batter and let them cook on medium-low heat for a few minutes on each side or until they are golden brown.
When the pancakes are fluffy and fully cooked, let them cool for few minutes. Decorate the pancakes with the white and red chocolate chips.
