Gingered Squash
Ingredients
- 3 C. cooked, mashed winter squash
- 1 ½ C. butter
- pinch salt
- juice 1 lemon
- 2 Tbs. honey
- 2 Tbs. gingerroot, peeled & minced
Directions
Mix all ingredients except gingerroot, adjusting amount of lemon and honey to taste. Place ginger in garlic press and express juice into squash and stir.
Serves 4 to 6.
