  • 1 C. mashed overripe bananas (about 3 bananas)
  • 3/4 C. sugar
  • 1 1/2 C. flour
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract or almond extract
  • 2 eggs
  • 1 stick (8 Tbs.) butter, softened or melted
  • 1/4-1/2 C. walnuts (optional)
  • 1/4 C. chocolate chips (optional)
  • Maple Glaze
  • 1/4 C. Butter
  • ½ C. pure maple syrup
  • 1 C. powdered sugar
  • ½ tsp vanilla extract
  • ¼ tsp ground cinnamon

Preheat oven 350 degrees. Combine all ingredients in a large bowl. Mix well. (HINT: Sift flour, sugar, and baking soda!) Pour into greased loaf pan. Bake for 1 hour at 350 degrees. Cool on rack when done. Serve warm or at room

Melt Butter, Maple syrup, vanilla and cinnamon over low heat. Once melted together, take off heat and mix in powdered sugar. Whisk glaze together until fully combined, then let the glaze cool and thicken.

Once cooled, pour over baked banana bread.
