  • 2 C. flour
  • 1/4 C. sugar
  • 1 T. baking powder
  • pinch of salt
  • 3/4 C. buttermilk
  • 1/2 C. plus 5 T. butter, melted and divided
  • 1/4 C. brown sugar
  • 1/2 C. sugar
  • 1 T. cinnamon
  • 1/2 C. raisins
  • 1/4 C. chopped walnuts
  • 3/4 C. powdered sugar
  • 1 T. water
  • 1/2 tsp. light corn syrup

Preheat your oven to 350°F and grease the inside of eight muffin cups. In a large bowl, combine flour, sugar, baking powder, and salt. Stir in buttermilk and five tablespoons of melted butter. In a small bowl, mix together brown sugar, 1/2-cup sugar, and cinnamon. Stir cinnamon sugar mixture into your main batter mixture and blend until just combined. Fold in raisins and walnuts. Distribute muffin batter into your prepared muffin cups. Bake for 15 minutes. Meanwhile, in a small bowl combine the remaining ingredients to form the glaze. Once muffins have cooled for five minutes, drizzle with glaze and serve.
