Glazed Butternut Squash
Ingredients
- 1 large butternut squash
- 2 Tbs. margarine
- 1/4 C. apple juice
- 1 Tbs. maple syrup
- pinch of ground nutmeg
- pinch of salt
Directions
Cut squash in half lengthwise. Place cut side up in a baking dish and cover each half tightly with foil. Add about 1/2 inch water to the pan and bake squash for about 40 minutes, or until easily pierced with a knife but still firm.
When the squash is cool enough to handle, scoop out seeds and discard them. Cut into 3/4 inch thick sections, then peel and cut into 3/4 inch chunks.
Combine all other ingredients in a pan and heat gently, stirring together. Add squash and raise heat to medium-high. Cook, stirring, until liquid reduces and squash is nicely glazed. This should take about 10 minutes. Serve.
