  • 3 C grated carrots
  • 4 eggs
  • 1 ¼ c vegetable oil
  • 2 C white sugar
  • 2 C flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • ½ tsp ground nutmeg
  • 1 ¼ c powdered sugar
  • 1 package cream cheese
  • 1 T honey
  • ½ tsp vanilla extract
  • 1 1/2 C diced apples of your choice

First, preheat oven to 350 degrees. Next, blend together eggs, oil, and white sugar until creamy and well combined. Next, mix flour, baking powder, salt, and spices. After dry ingredients are well combined, add carrots. Then, combine the wet and dry ingredients.

Pour batter into a greased cake pan and bake for one hour. While cake is baking, mix together powdered sugar, cream cheese, honey and vanilla.

After cake is done baking, cool before serving and adding glaze and apples.
