  • 1 lb. baby carrots
  • 2 Tbs. butter
  • 2 Tbs. honey
  • 1 Tbs. lemon juice
  • black pepper
  • 1/4 C. parsley, chopped

In a medium saucepan, bring water to a boil. Add salt and carrots; cook about 5 minutes or until tender. Drain the carrots and then add them back to the pan with honey, butter, and the lemon juice. Cook until the carrots become glazed. Season with salt and pepper and top with chopped parsley.
