  • 3 pkg. yeast
  • 1/2 C. water
  • 2 1/4 C. milk, scalded, then cooled
  • 3/4 C. sugar
  • 1 1/2 tsp. salt
  • 3 eggs
  • 1/2 C. shortening
  • 7 1/2 C. all-purpose flour
  • canola oil for frying
  • 1/2 C. butter
  • 3 C. powdered sugar
  • 2 1/4 tsp. vanilla
  • 7 T. evaporated milk

Mix your yeast with warm water and let it rest. Scald milk in microwave. Combine yeast, milk, sugar, salt, eggs, shortening, and three cups of flour. Beat on low for 30 seconds, making sure to scrape the bowl constantly. Increase to medium speed for two minutes and stir in remaining flour until smooth. Cover and let it rise until doubled, about 40 minutes. Turn dough onto a floured surface and lightly coat dough with flour. With a donut cutter, slice dough into donut shape and remove the donut hole. Cover and let rise until doubled, about 40 minutes. In a medium-size microwave safe bowl, melt the butter. Stir in powered sugar and vanilla and mix until smooth. In a very deep pan, heat the oil to 350°F. Gently place donuts in the oil and cook on each side for one minute. Place donuts on a rack and let drain over paper towels. Dip each donut into glaze and set back on rack to dry.
