In this fabulous side dish, the syrupy pears bring out the natural sweetness of the red peppers for a unexpected treat.

  • 1 bottle of sweet dessert wine, 750 ml
  • 2 cups water
  • 2 tbsp. honey
  • 2 cups maple syrup
  • 2 cups sugar
  • 1 tbsp. ginger, minced
  • 1 tsp. vanilla
  • 5 small Anjou pears, washed and cut in 1-2 inch wedges
  • 1 medium red pepper, sliced lengthwise 1 inch

In a large saucepan, combine wine, honey, vanilla and ginger. Simmer over low-medium heat for until all ingredients combined. Gently add pear wedges and simmer for 15-20 minutes. Remove from heat and allow to cool. In a small saucepan, combine sugar and water together. Bring to a boil over medium heat and reduce heat. Simmer for 5 minutes until sugar dissolves. Remove from heat and cool before drizzling it over each serving.
