This is a delicious, healthy, fiber-rich cornbread that incorporates antioxidants and fresh ingredients. I hope you enjoy this as much as my family and I did at our Thanksgiving table. Enjoy!

  • 1 ripe avocado, finely mashed
  • 2 C. grilled corn kernels
  • 1 1/2 C. rice milk
  • 1 3/4 C. cornmeal
  • 1 lg. sweet onion
  • 1 tsp. baking powder
  • sea salt and freshly ground black pepper, to taste
  • 1 C. fresh cherries, pitted and chopped
  • 1 tsp. sage
  • 1 tsp. lemon peel
  • 1/4 tsp. cardamom
  • 1/4 tsp. paprika
  • 1/4 tsp. chili powder
  • 2 Tbs. chia seeds
  • 3 lg. eggs, beaten
  • Optional Topping: Greek plain yogurt

Preheat oven to 350 degrees.  Prepare a baking dish with non-stick cooking spray; set aside. In a food processor, pulse avocado and grilled corn for 15-20 seconds. Transfer to a large mixing bowl, combine remaining ingredients; mix well to combine. Transfer mixture into prepared baking dish. Bake for 45 minutes or until golden brown. Serve with fresh cranberry sauce and a dollop of Greek plain yogurt. Enjoy!
