  • 1 T. extra virgin olive oil
  • 2 C. beef broth
  • 2 T. corn starch
  • 3 T. butter
  • 2 lb. beef, cubed
  • ¾ C. shallots, diced
  • ½ C. mushrooms, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • ½ C. sour cream
  • 2 tsp. Dijon mustard (gluten-free)
  • Sprinkle parsley (for garnish)

In a large skillet, brown beef in olive oil. Transfer to crockpot. Using the same skillet, sauté shallots and garlic until fragrant. Add sautéed bits over beef in the crockpot and season with salt and pepper. In a small saucepan, melt 3 tablespoons of butter and add in cornstarch. Whisk together and slowly incorporate beef broth. Bring mixture to a simmer and stir for two to three minutes as it begins to thicken. Pour over beef and shallots and cook on high for 4-6 hours. Separately, salute mushrooms and set aside. When your meal is 30 minutes from being ready to eat, mix together sautéed mushrooms, sour cream, and Dijon mustard. Add to crockpot, stir well, and allow to heat for the remainder of the cooking time. Serve over a bed of white rice and garnish with fresh parsley.
