  • 2 1/2 C. uncooked gluten free pasta.
  • 2 grilled chicken breasts (cooked)
  • 2 C. grape tomatoes (chopped)
  • 6 oz fresh baby spinach leaves (cooked)
  • 4 oz fresh mozzarella cheese, cut into cubes
  • 5 tbsp olive oil
  • Shaved parmesan for topping
  • Salt and Pepper (optional)

Heat salted water in large pot over a medium-high heat. Once water comes to a boil add pasta and cook until tender. After the pasta is cooked, drain and return to pot. Add spinach, tomatoes, and olive oil, stir continuously until the ingredients are fully mixed. Next, stir in mozzarella cheese until melted.

Top dish with a shaving of parmesan.
