Goat Cheese and Tomato Spread

This makes a great appetizer for any dinner party!

  • 4 cloves garlic, unpeeled
  • 4 oz. goat cheese
  • 1 C. plum tomatoes, peeled, seeded, and diced
  • 1/2 C. red onion, diced
  • 1/4 C. olive oil
  • 6 Tbs. balsamic vinegar
  • 3 Tbs. fresh basil, chopped

Preheat oven to 350 degrees.  Wrap garlic in foil and bake 15 minutes until soft.  Squeeze garlic from skin and mash with fork.  Beat garlic and goat cheese until smooth.  Shape cheese mixture into mound in a microwave-safe dish.  In a bowl, toss together tomatoes, onion, basil, oil, and vinegar.  To serve, warm cheese in the microwave.  Place warmed cheese in the center of a serving platter and spoon the tomato mixture over the goat cheese.  Serve with toast points or crackers.
