Croquettes are one of my favorite foods. Usually, they're made by grinding meat, coating, and frying into bite-size pieces. Since I've gone vegetarian, I decided to try making a variant using goat cheese. Trust me, these are absolutely delicious and perfect for either a formal or casual party!

  • 4 oz. goat cheese
  • 1 lg. egg, beaten
  • 2 Tbs. flour
  • 4 Tbs. panko bread crumbs
  • 2 tsp. salt
  • 2 tsp. pepper
  • 2 tsp. paprika
  • 1 inch peanut oil, for frying

Divide the goat cheese using unflavored dental floss into 8 equal slices. Using hands dipped in ice water, roll each slice into a ball that's 3/4 inch around. 

Using a fork, toss the balls in flour, then dip in the egg, and roll in the panko, salt, pepper, and paprika until evenly coated. Allow to chill in the fridge for at least 30 minutes before continuing. 

Heat 1 inch of peanut oil in a large skillet over medium-high heat. Gently drop the chilled croquettes into the oil and fry until golden brown on all sides. It should take about 2-4 minutes. Transfer to paper towels to drain. 

Serve immediately with some honey mustard or marinara for dipping.
