Ingredients

  • 3 zucchini, sliced lengthwise into 1/4-inch slices
  • 1 Tbs. olive oil
  • 1/8 tsp. salt
  • Pepper, to taste
  • 1 1/2 oz. goat cheese
  • 1/2 tsp. lemon juice
  • Green leaf lettuce, as needed
  • Parmesan cheese, as needed

Directions

Brush zucchini slices with olive oil on both sides. Season with salt and pepper.

Heat grill on medium-high heat. Grill zucchini on a pan for 4 minutes on each side, or until tender.

In a bowl, combine goat cheese and lemon juice, mashing with a fork.

Put 1/2 teaspoon of the cheese mixture on a zucchini slice. Roll up and place seam side down. Repeat with remaining slices.

Place zucchini on top of green leaf lettuce. Top with Parmesan cheese and serve warm.
