  • 4 russet potatoes
  • 2 T. olive oil
  • 1 stick butter
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 T. chives, finely chopped

Pierce each potato with a fork several times, rub with oil, and sprinkle with salt and pepper. Wrap each in foil, place on grill, and cook for 45 minutes, turning occasionally, until tender. In a bowl, whip together butter, garlic, chives, and additional pepper until well combined. Refrigerate until ready to use. Slice potatoes and spread butter inside. Garnish with extra herbs and other preferred toppings.
