Ingredients

  • 2 sticks butter, divided
  • ½ C. all-purpose flour
  • 2 C. milk
  • ½ C. cheddar cheese, shredded
  • ½ C. white cheddar cheese, shredded
  • Salt and pepper to taste
  • 3 lb. potatoes, peeled and sliced
  • Dash nutmeg
  • 2 C. panko bread crumbs
  • 2 tsp. paprika

Preheat oven to 350 degrees. In a greased baking dish, layer potato slices. In a saucepan, melt 1 stick of butter and whisk in flour until well combined. Cook for a minute and whisk in milk until there are no more lumps. Continue cooking as sauce thickens; stir in cheddar, white cheddar, salt, pepper, and nutmeg. Pour sauce over potatoes. In a bowl, combine remaining butter, bread crumbs, and paprika. Top casserole with bread crumb mixture, cover with foil, and bake for 45 minutes. Remove foil and bake for an additional 15 minutes.
