Golden Cornbread
Ingredients
- 2 eggs, slightly beaten
- 1 C. milk
- 1/4 C. oil or melted shortening
- 1 1/2 C. yellow cornmeal
- 1 C. all purpose flour
- 1/4 C. sugar
- 2 1/4 tsp. baking powder
- 3/4 tsp. salt
Directions
Heat oven to 450 degrees. Grease an 8 or 9 inch square pan. In large bowl, combine all ingredients; mix well. Pour batter into greased pan bake at 450 degrees for 20-25 minutes.
Yield: 6-8 servings
Note: Recipe can be baked in muffin cups or cornbread stick pans. Grease 12 muffin cups. Fill muffin cups 2/3 full. Bake at 450 degrees for 15-20 minutes or until toothpick inserted in center comes out clean.
