  • 3 pounds russet potatoes
  • 1 white onion
  • 4 stalks celery
  • 1 green bell pepper
  • 1 clove garlic
  • 1 dozen hard boiled eggs
  • 2 cups mayonnaise
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon dried dill

Start by scrubbing and peeling your potatoes. Roughly chop into pieces, however small or large is totally up to you! Boil your potatoes until tender, and then drain and place in a large bowl to cool.

Chop your onion, celery, bell pepper, and garlic. Once again, the size of the pieces is entirely up to you. The bigger the pieces, the bigger the crunch. If you want a smoother potato salad, chop the veggies smaller. Shell and chop the hardboiled eggs.

Add your vegetables into your bowl of cooled potatoes. In a smaller, separate bowl, combine your mayo, mustard, and spices. Add the mayo mixture to the large bowl and toss well, making sure everything is coated and well combined. Sprinkle some garnishes, such as chopped chives or bacon bits on top.

Serve at your picnic or barbecue and enjoy!
