  • 2 T. butter
  • 1/3 C. mozzarella cheese, shredded
  • 1/3 C. Asiago cheese, shredded
  • 1/3 C. Gruyere cheese, shredded
  • 1/3 C. Parmesan cheese, shredded
  • Salt and pepper to taste
  • 2 lb. russet potatoes, peeled and thinly sliced
  • 2 C. heavy whipping cream
  • 1 T. parsley

Preheat oven to 425 degrees. Grease the bottom of your baking dish with butter. In a bowl, combine mozzarella, Asiago, Gruyere, and Parmesan. Make a layer of potato slices then top with a layer of your cheese blend. Repeat layers until you run out. Whisk together cream, salt, and pepper. Pour evenly over potatoes and bake for an hour until potatoes are tender. Garnish with parsley.
