This tasty version of french onion soup can be enjoyed by vegetarians, too!

  • Soup
  • 3 lg. onions, sliced
  • 3 Tbs. butter, melted
  • 3 Tbs. all-purpose flour
  • 1 Tbs. Worcestershire sauce
  • 1 tsp. sugar
  • 1/4 tsp. pepper
  • 4 cans (14 oz. each) vegetable broth
  • Bread
  • 8 slices French bread, 1-inch thick
  • 3/4 C. shredded mozzarella cheese
  • 2 Tbs. grated or shredded Parmesan cheese

In slow cooker, mix onions and butter. In small bowl, mix flour, Worcestershire sauce, sugar and pepper. Stir flour mixture and broth into onions. Cover; cook on Low heat 7 to 9 hours. Set oven control to broil. On rack in broiler pan, place bread slices. Sprinkle with cheeses. Broil with tops 5 to 6 inches from heat about 3 minutes or until cheese is melted. Place 1 slice bread on top of each bowl of soup. Serve immediately.
