These aren't your average potato pancakes! With mint, and feta cheese, these crisp and savory pancakes are full of Greek inspired flavors!

  • 1 lb. potatoes, peeled and cooked
  • 2/3 C. feta cheese
  • 2 green onions, sliced
  • 2 T. minced red onions
  • 2 T. dill
  • ½ T. mint
  • 1 beaten egg
  • 1 T. lemon juice
  • Flour
  • Olive oil

In a large bowl or pot, mash the potatoes with the feta, green onion, red onion, dill, mint, egg, lemon juice, and salt and pepper. Allow the mixture to firm up in the refrigerator to firm up. Divide the mixture into small balls, then flatten them. Dredge each pancake in flour, then fry in a pan heated with olive oil, browning both sides. Drain the pancakes on a paper towel.
