Golden Mushroom Meatloaf
Ingredients
- 1 lb. ground chuck
- 1/2 C. breadcrumbs
- Salt to taste
- 1 egg
- 1 Tbs. ketchup
- 1/4 C. milk
- 1/4 tsp. thyme
- 1/4 tsp. sage
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/2 tsp. parsley
- 2 10 3/4 oz. cans golden mushroom soup
Directions
Preheat the oven to 400 degrees. Mix all ingredients together in a large bowl. After all the ingredients are mixed, put into a glass baking dish and shape into a loaf, not too thick. Do not bake in a loaf pan, it will not bake right. Bake in the oven for 15 to 20 minutes, when the meat is brown take out of oven and skim off as much as possible of the grease. Lower the temperature to 350 degrees.In the meantime, mix 1 can of soup with just enough water to make the soup like a gravy - not too thick or too thin. Spoon some of the soup over the meatloaf, enough to cover it, and continue to bake it for another 45 minutes to 1 hour. Make sure you check the meatloaf and spoon the soup over to keep it moist. Use the remaining soup as the gravy for the meat when you slice it and put it in the plate. If you need extra gravy use the extra can of soup, mix it the same way. This recipe can be doubled, just double everthing for two lb. or more meat.
