Nothing can really compare to classic fried potatoes. With a dusting of oregano and a sprinkling of Parmesan these thin-cut potatoes are too good to pass up!

  • 5-6 large potatoes, peeled and thinly sliced
  • ΒΌ C. olive oil
  • 1 tsp. oregano
  • Salt and pepper to taste
  • 2 T. Parmesan cheese, grated

Heat oil in a large skillet over medium-high heat. Add potatoes and season with oregano, salt, and pepper. Cover and cook for about 5 to 7 minutes, stirring occasionally, until they begin to brown. Flip potatoes, cover, and repeat until golden. Sprinkle Parmesan cheese over cooling potatoes.
