  • 4 (8 oz.) cans crescent rolls
  • 1 T. olive oil
  • 2 large Russet potatoes, peeled
  • 1 onion, diced
  • 2 cloves garlic, minced
  • ½ C. red bell pepper, diced
  • Salt and pepper to taste
  • 1 tsp. cumin
  • 1 tsp. cayenne pepper
  • 2 T. lemon juice
  • ½ stick butter, melted

Preheat oven to 350 degrees. In a large pot of water, boil potatoes for 15 minutes until tender. Drain and set aside to cool. In a large skillet, heat oil and sauté onion, garlic, and red bell pepper until softened. Dice potatoes and add into skillet; season with salt, pepper, cumin, lemon juice, and cayenne pepper. Mix well and remove from heat. Grease a baking dish or bundt pan. Take each crescent triangle, roll into a ball, flatten, and fill with a tablespoon of potato mixture. Pinch sides together to seal, dip in melted butter, and place in pan. Repeat the process, filling the pan and stacking dough if needed. Bake for 30 to 40 minutes until golden brown.
