  • 3 C. cooked brown rice
  • 1 10-oz. pkg. frozen corn, thawed
  • 1/2 C. chopped onion, sauteed
  • 2 C. grated cheddar cheese
  • 1 1/2 C. skim milk
  • salt, to taste
  • pepper, to taste

Combine ingredients. Add salt and pepper to taste. Pour into a buttered 2-qt. casserole dish. Bake at 340 degrees in oven for 35-40 minutes.
